Coco nana bread
1 cup almond flour
1 cup spelt flour
1 tablespoon baking soda
2 ripe bananas
2 tablespoons of melted coconut oil
(More if desired)
3 tablespoons of shredded coconut
2 tablespoons cocoa powder (or more)
Handful of blueberries (optional)
1 tsp lemon extract
Half a cup of spelt milk or almond milk
1 egg
Preheat oven to 180
In a large bowl Mash the bananas up and add all wet ingredients, egg, milk, extract, blueberries, oil.
In the same bowl add the remanding dry ingredients. Mix together well! Should be a nice thick consistency and semi smooth and it should smell amazing!!
Grease your baking tin! Add and then bake for 30 mins or until it looks ready. Try not to open the oven until you think it’s ready! It will sink otherwise!

Pureed Apricots, Shredded coconut with Apple and Pear puree!
Half a bag of Apricots (i used dried or you can use fresh)
Shredded coconut or the raw coconut bites in my picture
1 apple and 1 pear organic

Once it starts boiling turn down to low. Cook for about 10-15 mins. Remove from heat and add a little more water and blend away. So thats one baby puree done. If its too thick still add more water . Just about common sense here
So for the apricots cut all of them up dosnt matter what way. Add to your cup or bowl that your going to blend in. Add quite a bit of water, the trick is to keep testing after each blend. I found i had to put a lot more water in but start off with half a cup. Blend away, you want a nice thick smooth puree here, keep trying to get this by adding water. I used already boiled water also from the kettle. So thats done! So easy!!!
Then too spice things up a bit i get Iylas bowl and put 2 big spoonfuls of each puree in and then on top i crumble coconut on it . Mix it all and it taste so good! You can also add yogurt and leave one out if you like.
You have about 1 weeks of food here already, so much better than the processed stuff at the stores, it really dosnt take that long to do this, Store in a container, i like glass containers . I can eat this too!!

Milk, ( cashew or almond ) whatever you use
Banana chopped and mushed
Cook oatmeal as normal and add all the rest of the ingredients! You don’t need any sweetener as the banana and milk do that for you. If you wanted add either cinnamon or honey on top when you finished cooking it.
This is Iylas favourite and only way I can get her to eat fruit!! Ha and in muffins or pancakes

French Toast Sundays!
Great toddler food

3 slices of Bread
2 eggs
Cinnamon
Coconut oil or butter
Chia Seeds
Maple Syrup
Whisk 2 eggs into a tray or something that will fit the bread in, till well whisked, add a tiny bit of cinnamon in 1 pinch.
Add a tablespoon of coconut oil to a pan or butter if you prefer, let heat up a little meanwhile..
Dip both sides of the bread into the eggy batter, and add it to the pan, cook well on both sides until golden brown.
Add to a plate and sprinkle on chia seeds or wait for them to do it Iyla loves sprinkling her own and putting her own maple syrup on. Spice things up with some fresh berries or banana, even some whipped cream!!

Im collecting glass jars to put baby food in! Its such a good idea, any sauce jars or jam jars. All you do is soak the jar in water overnight or for a few hours so the label becomes soft and it peels right off.
Quinoa with Pumpkin and Potato
So i was cooking a pumpkin soup and decided to put more veggies in than usual . I already had some left over quinoa in the fridge so you can cook this as well, just follow the instructions on the packet
Half of a onion/ Chopped and peeled
1 Leek
1 pumpkin chopped roughly
2 potatoes
1 L Vegetable stock or if you eat meat any stock you want!
1 decent size knob of ginger, finely chopped
Teaspoon of Cumin powder
Add coconut oil/olive oil to a pot and add onions, cook until soft
Then add leek, cook for a little then add all vegetables, cook for a little then add all the stock.
While this brings to boil in a separate pan, add some oil, ginger and cumin. Stir until fragrant , only takes 2mins not even. Then add this too the soup
Once it has boiled. Turn it to a simmer and cover with a lid. Cook until vegetables are soft.
You can blend it or leave it chunky. I put Iylas in a separate bowl and left it chunky so she can experience the textures. I added spinach also so when i heat it up it will wilt.
You have a nice soup there for yourself also!

Add chopped Potato and Broccoli then stir.
Pour the veggie stock in , all the veggies should be covered but not to much because you don’t want it to be watery.
Cook until the Potato is cooked about 20 mins. On medium heat, add a little salt to taste .
Once it’s done you can leave chunky, or blend it up with a hand blender. Iyla likes this better so a nice creamy soup for your little one!
You can totally double this recipe if you want to freeze It. This last me for 2-3 nights
